Fast Break Pocket Sandwiches
(Always trying to find ways to make meals on camping trips easier, with fewer dishes, I came up with Fast Break Pocket Sandwiches.)
Bacon or sausage
Scrambled eggs
2 slices of bread/person
1 slice of cheese/person
Before leaving on your camping trip, cook enough bacon or sausage for the number of people you’ll be serving. Let it cool, and wrap up. Using a microwave egg cooker, mix up scrambled eggs for each person. (Cooking the eggs in the microwave w/ an egg cooker makes little egg patties.)
On the campsite, butter a cast iron pie maker. Add 2 slices of bread, some meat, an egg patty and a slice of cheese. Cook in the campfire until done. (BEWARE, LET THEM COOL A LITTLE BEFORE YOU EAT THEM, THAT CHEESE GETS MIGHTY HOT!!!)

Bagged Omlette
Eggs (1-2 per person)
Milk
Any or all of the following….cheese, ham, bacon, onions, peppers, tomatoes, mushrooms
Pita Bread (optional)
Zipper type freezer bag
Put 1-2 eggs in bag and add desired amount of milk. Add the additional ingredients. Seal bag tightly. Place bag in boiling water and cook for 3-5 minutes until desired doneness. To eat as a breakfast sandwich, put egg combination in pita bread.

Tortilla Scramblers
Eggs (2 per person)
Bacon (2-3 slices per person)
Shredded Cheddar Cheese
Salsa (optional)
Flour tortillas
Fry bacon in skillet and lay on paper towels to drain. Scramble eggs in the bacon grease (you might want to drain “some” of the grease). Meanwhile, warm flour tortilla shells. (You can wrap them in foil and warm slightly over fire). Layer scrambled eggs, bacon, cheese & salsa in shells. Roll up like a burrito and enjoy!!

Broccoli & Cheese Scramble
(We make this for breakfast and the kids love it.)
Boil up a 10 oz pouch package of broccoli in cheese sauce (like Green Giant) according to directions. Scramble up your eggs in the fry pan and just before they are done cut open the veggie pouch and fold in the broccoli and cheese sauce into the eggs . Stir and cook until your desired consistency. Serve and enjoy!!!

Corny Cakes
(makes 10-12 pancakes)
1 Pkg. “Jiffy” Corn Muffin Mix
1 egg
2 Tbsp. melted shortening
3/4 cup milk
Mix ingredients together. Spoon onto hot greased griddle. Turn pancakes when bubbles appear. Serve with bacon, sausage or scrapple.

Fruit Flavored Pancakes
(variation on above recipe)
Instead of corn muffin mix, substitute one of the fruit flavored muffin mixes. (blueberry, raspberry, apple, banana nut, etc.)

Sausage Gravy On Biscuits
Make Bisquick biscuits in advance and store in a ziplock bag. Cook sausage and crumble while cooking, drain fat. Add flour and milk to sausage to make gravy. Warm biscuits and top with the sausage gravy.

Potato Cakes
Mix dried potato flakes with just enough milk to bind them together. To the mixture add dried minced onion, garlic, sage and pepper. Form into patties approximately 2″-3″. Fry in butter. Serve as a side dish with eggs and a meat.
