Simple as ever...
What you need:
Vine ripe tomatoes, the bigger the better.
Fresh basil, fresh oregano. chopped. ( I use about a half cup of each )
Vinegar
Sugar
Slice vine ripe tomatoes. lay them out on a plate or two. cover with a layer of sugar. Spinkle fresh oregano and basil, sprinkle vinegar over all.

I think my wife makes these. I eat tomatoes when fresh out of the garden. Don't like them all fancied up.
