Since I'm a mom of two little ones, I like to make camping prep as simple as possible and cook ahead, so that the vacation itself isn't filled with cooking. Often, the week before the trip I will double some recipes, especially for side dishes, then freeze the leftovers for camping. I just made a big batch of scalloped potatoes and will save half for our trip next week.
Here's the recipe:
Scalloped Potatoes

1/4 c butter
1/4 c. flour
1 tsp dried parsley
1 tsp salt
1/4 tsp pepper
3 c milk
6 c thinly sliced potatoes
1 sm onion chopped

Melt butter, stir in flour, parsley, salt and pepper until smooth. Gradually add milk and bring to boil. Cook and stir for one minute. Place potatoes and onions in a 2 1/2 qt dish that has been sprayed with cooking spray. Pour sauce over top and mix. Cover and bake at 375 for 1 1/2 hours. On your camping trip, microwave leftovers until bubbly.

Ooooooooooo that looks so so good!! I do the same Grace....makes it so much easier. I also always chop onions and green peppers and freeze them so I have them for mountain pies, omelets etc...I always make dips the night before and I also make up hamburgers and put them in those Tupperware containers made for hamburgers, stackable ones, then all I have to do is pull them out thawed or not, either way.

Camping isn't my life, my grandchildren are!
